While it seems obvious that our restaurants and bars help define who we are, they are not offered special protections like other cultural institutions. As a society, we would never allow the pandemic to permanently shutter the Guggenheim, Ellis Island or the Apollo Theater. It is ironic that the Museum of Food and Drink, as a museum, is entitled to aid from the last COVID relief package, but the food establishments whose cultural importance MOFAD explores will receive nothing. If we do not systematically value independent restaurants and bars through targeted relief, 85% of the nation’s 500,000 independent restaurants may close.
